Brinjal,egg plant(Baingan preferably green):1/4 kilo (1 Pao) Make slits for filling spices .
coconut powder:6 tea spoon
Sesame seeds(Til): 5 tea spoons
Peanuts(moong Phalli): 4 tea spoons
Cumin(Zeera safed):1 teaspoon
Whole Coriander(sabot dhania):2 teaspoons
Onion:2 medium size
Ginger -Garlic Paste:1 tablespoon
Green chilies-5
Red chili powder:2 teaspoons
Salt:to taste
Tamarind (Imli):(1-2 table spoon soak to take out pulp)
For Seasoning(Baghar or Tarka)
Mustard seeds(Rai):1 tsp
Kari Leaves:12-14.
Cumin(Zeera safed):1/2 teaspoon
Oil:12-3/4 cup


1.Roast coconut powder,peanuts,cumin(zeera),coriander seeds(sabot dhania) and Sesame seeds(Til) on a tawa or fry pan without oil .
2. Don’t raise the flame and be careful as the ingredients burn easily.
3..When they gel slightly golden turn the flame off and set them to cool.
4..Grind all these ingredients to a fine powder or paste .
5. Take half cup oil and fry onion slices to a pink shade.
6..Add these fried onion,ginger garlic paste,roasted spice powder or paste ,chili pwder,turmeric and salt in a blender.
7.Add some water and blend to a thick paste.
8..Fill this spice paste in brinjals (baingan)
9..Heat 1/2 cup oil (in which you have fried onion)
10.add seasoning ingredients.
11.After a second add brinjals(Baingan) with spice paste.
12.Add green chilies and cover the lid.
13. Cook on medium flame for 10 minutes stirring occasionally and carefully.
14.When the curry leaves oil add Tamarind (imli) pulp and leave on low flame .
15.Cook for another 5 minutes.
