Take 2 tbsp flour and mix it with 1/4 tbsp of salt and pepper each. Take a 4 ounce chicken breast and butterfly it. Then put both sides in the flour mixture. Take one tsp of canola oil in a large pan. Heat the oil on medium energy and add 1 minced garlic clove and 1 tbsp of diced onion into the oil. Fry them for a minute and ass one cup of quartered mushrooms and cook for 5 minutes. Add chicken to the pan and let it sear for 2 to 3 minutes. Add 1/3 cup of marsala wine to the mixture and let it simmer until the wine is reduced to half its volume. You can roast potatoes and serve the chicken with potatoes and green beans. Steak with Eggplant
You will first need 1 chopped garlic clove, 1/4 cup of red wine, 1 tsp of olive oil and salt and pepper. Whisk all these things together and then pour it over a steak. Leave the skirt steak to marinate for 20 minutes. Take 1 medium eggplant and peel and cube it. Sprinkle 1 tsp of salt on the eggplant and let it sit for a while on a paper towel lined with colander. After the steak has marinated, cook it in an oiled skillet for 2 minutes on each side. Place it in an oven at 350 degrees for 10 minutes and let it cook. Meanwhile saute the eggplant in 1/2 tsp of olive oil until it is golden and then add one third cup of minced onion. Cook for two minutes and add half cup of chopped tomato. Cook for two minutes again and then season with black pepper and salt. Add feta, mint and parsley on top to garnish.

First cook 4 slices applewood-smoked bacon in a large pot; then add 2 garlic minced cloves and 1 cup diced onion. To this add chopped celery, carrot and potato with skin on but chopped. Let it cook for 5 minutes and then add 16 ounces clam juice and 3 cups 1% milk. Reduce heat; simmer until vegetables are tender.
